Backup server via SSH with remastersys other way safe update

Hello recently a friend of mine gave me a web server to do some updates (apache,php,mysql,web server), im still learning on how to handle a server and how to back up a server, first i checked the change log (what is going to change if i update mysql php etc) and i saw allot default settings change with the new updates, so i decided to create a clone of the server and run it on local, so i can test the updates there, please tell me if that I thought was a good idea or if there is any other/better way to do it, and is possible to clone the server with resmatersys via ssh? (i have only ssh access).
The server is running on debian.
