For a fresh install, simply use the partitioning tool included in the new Debian Sarge installer and set up the partions on the harddisk. You can then tie them together using said installer as RAID5 in software.

If you're trying to set up RAID5 on extra harddisk after the initial install, simply use mdadm to set things up on the command line.
