I would like a how-to for a way to stop the boot sequence or reaching the console so that i can edit the ethernet connection string.

Boot into single (rescue) mode? If you use Grub you should have it in the boot menu.

Simply append 'single' to the end of your boot parameters but as Lavene has said, there should already be an entry for that there.
