I think the answer would be the same for any days since it was born - when you want different configuration options from standard.

it is useful to compile a new kernel in order to: 1. Handle special hardware needs, or hardware conflicts with the pre-supplied kernels. 2. Optimize the kernel by removing useless drivers to speed up boot time (Do you really need it?) 3. Use options of the kernel which are not supported by the default kernel.

Twenty years ago we were all compiling kernels. Home computers had "blazing fast" 486 processors and there were advantages to tweaking kernels. Today with better machines and versatile kernels there isn't much point for most of us.

I notice that the newer Debian kernels are not implementing the new built-in Virtual Box guest drivers, so if you want to experiment with that, you'll have to configure the support and rebuild the kernel. Just an example on one tweak among many.
