I use Thunderbird, but it's mostly because it has the best syncing calendar I've found yet.

I just use thunderbird because it's easy and I do 90% of my email from my phone so not really worth the effort to try new desktop clients

Icedove. I also (have to) use Outlook on my work machine and find it a pain, although it does integrate my calendar well.

My all time favorite is PMMail, but since I don't use OS/2 anymore...
For Linux I use Icedove, mainly because I haven't taken the time to explore other options.
If they'd port PMMail to Linux I'd actually pay money for it.

I played around with Claws, but went back to Icedove/Thunderbird. There were things I'd grown so used to in Thunderbird that Claws did differently, that I was constantly annoyed with it. Thunderbird works so well that I don't even have to think about it. Unfortunately, I have had it crash several times since the last update. I run claws-mail by default unless on low end setups where the Seamonkey suit it is by far the lightest graphical set up once you include a browser. I've found the difference between firefox and thunderbird and pure Seamonkey enormous.
I'll qualify that by saying I don't tend to run any QT applications but would be surprised if anything running QT4 > is lighter
I've found sylspheed to be the lightest stand alone gui but not much in it over claws when you don't use plugins

A simple email client for me would be one that mimics webmail without too many features apart from mail search, mail writing and mail viewing.
