What kernel would you recommend best, and why?
Both of them, offers last stable debian kernel 4.7.2

Re: Sparky or Liquorix Kernels?
What is the configuration of the Sparky kernel?
Which options are enabled?
For example, is it Zen-patched? Does it make use of hard kernel pre-emption? Is the BFQ scheduler used?
Perhaps you would be better off asking this on their boards.
