I'm used to that the Ctrl-z keyboard shortcut "undo" my previous action. e.g. when I made a typo. Now when I press the Ctrl-z combination the "Enter command" dialog
appears. how can I make Ctrl-z keyboard combination do the undo'ing? Or if that isn't possible: what is the GNOME3/Debian shortcut for the undo'ing?
I'm running debian8 with GNOME3 and I have a qwerty keyboard and the keyboard layout is set to: English/International.

CTRL-Z is not a global keyboard shortcut. Which program are you having issues with?

i must say i really appreciate that a few keyboard shortcuts are operating system independent - ctrl-c, ctrl-a, ctrl-v, and often also ctrl-z and ctrl-y.
it is very poor taste to break them with a global run dialog! shame on you, gnome!

Well its not happening with just an specific application. Its just happens in general. It just doesnt work.

In Gnome 3, under Settings > Keyboard, there is a keyboard shortcut for "Show the run command prompt". Mine is set to Alt+F2.
