Debian Upgrading from 8.9 -> Last

Hello Together
I'am Play with the Ideea to upgrade me Debain, this Moment i'am running with 8.9 and i think to upgrade from Jessie -> Stretch

i have running on this machine the Core Application Postfix Dovecot and MySql, yes i will do any Backup.

But can here give me any cosideration, it's this jump cosidered, or are this to dangerours, about Problems with me Mailserver?
or i Need to reconfigure after this upgrade the hole System?

But bevor i will read this i have think to ask for consideration ;-)

i think you have also Upgraded any productive Server's and what are you thinking about expiriences.
are this a 50:50 Chance or, are this any possible way, or it's so that after the Upgrade i need to
reconfigure the machine?

"Chance" has nothing to do with it.
Make sure your machine is in a clean state (remove third party and backport packages and repo's), follow the upgrade procedure, make any necessary adjustments to upgraded versions of what you have installed.

my server is still running jessie, and until the need arises i won't dist-upgrade.
it will receive security updates for a long while still.
just now i received an update for wpasupplicant.
