Debian Workstation for dual boot with Windows 10 Home 64 Bit

All our new notebooks are HP 14-ck0023tu with pre-installed Windows 10 Home 64 Bit.
We will keep Windows in silence and use it for only some occasion. We are now moving to Debian Workstation and LibreOffice.
What is the best size to shrink the volume for Debian Workstation?

FWIW, I get by with ~30GiB and could probably manage on half that.
