I think I figured out the issue. Port forwarding was not configured properly. I'm fairly certain the reason it was accepting an SSH attempt was it was actually the router allowing me to attempt to SSH into it over WAN. However, since the user doesn't exist on the router, it gets denied and also naturally doesn't show up in my server logs. I assumed I had it set up properly because it was accepting connection attempts, but it turned out not to be the case.
