I tried using a live cd (slitaz) to make the label changes, but it has too old a version of gparted.
Incidentally, its kernel is 2.4 and it always got the bus order correct - I use it for cloning my system disk using 'dd'.
Guess I'll have to get a newer live disc and be extra careful now with 'dd'.

So here's what I did, based on p.H's recommendations:
Booted my system and made sure sda was the system disk.
Then :

sudo e2label /dev/sda1  VENTO_OS
sudo swapoff /dev/sda5
sudo swaplabel -L VENTO_SWAP /dev/sda5
sudo swapon -L VENTO_SWAP


I had to temporarily turn swap off to allow swaplabel to work.
So you can change partition labels on a running system!

My new fstab is now:

and all is now working ok (checked by issuing a 'lsblk -f' command).

No, I think that's an extended partition. It contains extra logical partitions (just /dev/sda5 in your case) to allow for an MSDOS partition table to have more than four entries. It shouldn't be listed in /etc/fstab so a label is unnecessary.

A partition itself has no LABEL or UUID. LABEL and UUID are properties (metadata) of some contents types of a partition (many filesystems, swap, LUKS...), not of the partition itself (unlike PARTUUID and PARTLABEL).
If a partition does not contain such contents type, then it has no LABEL or UUID.
An extended partition only contains an extended DOS partition table, no data.
