Is there any way to switch from modern gnome to gnome classic when using the live iso (without installing)?

Well, it might depend on which "live iso" you are using, and if it has it on it.

strange, it seems most people only read (and reply to) half of what was asked.
maybe if i repeated every question/instruction once, it would stick?

anyhow, on topic:
to literally answer your question i'd say: the same way you would access it from an installed version of gnome.
the same way you would access it from an installed version of gnome.
probably log out, choose classic session, log in?
try to log out, choose classic session, log in?

This is the iso:

and here is its package list, but I don't know what to look for:

Is the classic interface not just a user setting in gnome? I normally use xfce, but if I recall correctly, in gnome 3 there is a choice of interface at login time. I see no corresponding option for the live iso.

If there is no way to switch gnome to the classic interface without logging out, it probably cannot be done from a live iso. I suppose I could ask on the debian-live forum.

Well I did read it all, but not knowing which ISO the OP was using, couldn't say any more.
On the older images you can log out, as far as I know there is no way, without logging out, because the initial login is the default DE.

On Debian 6, it was what is now known as Gnome classic,... that was way back when Gnome was still a good DE choice. On Debian 7, it was possible, the live ISO had a choice for Gnome Classic, if you logged out, the options were there on the login field, "default" ,"Gnome", or "Gnome Classic"

Since the OP is referring to Debian 9, I do not know, I have not tried it.

I am logged in using my old Debian 6 live CD, works great, I had 2 options to log in, "default" and Gnome. The above screenshot is the Gnome, selected after logging out.

P.S, I don't know if they still use the same, but on Debian 6 "live" was the password to login again , after logging out.
