anyone else facing similar issues with sensors plugin for XFCE?

It seems to me to be an older bug.

hmm, interesting, that is a stretch bug, but for me it worked perfectly in stretch. in Buster I can easily reproduce the bug, just enabling disabling tooltips in the sensors plugin settings and all settings are lost after reboot.
