Stable gets the fastest security updates from the Debian Security team.
Sid only gets updates as new packages enter from upstream.
Testing only gets updates after they migrate from Sid.

How come your libre-office errors are complaining about V10 dependencies being unavailable?
Post your list of sources.
I'm guessing you had Buster with 'stable' in your sources and have just had a "surprise upgrade".
