I was just looking for a simple way to have it start up only when we want to get on and play, without having to manually ssh in and start it. Not a big deal, I guess; right now I have it running from rc.local, and it doesn't seem to use up much when nobody's connected.

Yeah usually the best approach in situations like this is to remove the problem packages and reinstall them after the upgrade is done. cups packages would be on CD1 wouldn't they? If the install CD is still in sources.list, you might be able to slip in CD1 and use tasksel to install the "print server" task.
