There is a choice in Gnome Software preferences. Don't know what backend facilitates this. As I said unattended-upgrades is not installed so Software must manage it somehow. Unattended-upgrades is not installed if you install debian desktop... automatic updates are handled nowadays with a proper UI that lets users decide the most convenient time to apply them.
