I've done both and find virtual to be easier. It can be useful to create a virtual install and then transfer data into it from your host. It's very easy to compare when you have both running. There are some issues, such as hardware, that you can only test with a bootable USB.

Most, if not all, of us have installed a non-Debian package. The important thing to remember is to block the repo after installing. If you leave a source open every time you do an upgrade you can have little surprises sneaking in.

For most stuff, use deb. Some things are better not fully installed. For example I have the Tor bundle in my ~/user directory which has no access to anything root. There are programs from non-Debian sources that I want to test without installing that I run as app in ~/user or install to a VM.

I'm still using Debian 10. I'm old, my computer is old and I'm using old software. Newer versions of Debian aren't backward compatible with some of my treasured programs. I see no reason to upgrade.

Can you turn off the automatic update feature? plug the printer's IP address into your browser and see what comes up. You might be able to access all sorts of settings. I know this will sound counter intuitive but bear with me. We have a Canon MX30. It's old. It's so old that it hasn't been infected...
