Although mixing stable and unstable is generally a no-no it can sometimes be what you want. To avoid what you experienced you can (should) set apt to prefer stable. Edit, or create if it's not there, /etc/apt/apt.conf and put in: APT::Default-Release "stable"; That will prevent a full upgr...

You are supposed to enter the exact file name. The author just uses "(version)" because he can't possibly know what it will be.

But what are you trying to do? Asterisk is in the Debian repositories?
