You can select GUI installation from the installation images, Live images as well have a option to install.

Well there are ways to use wifi in Linux. I have only used wpa-supplicant and now iwd, and they require admin rights to alter wifi-password. And they don't even show the wifi-password in normal usage.

If you use standard package managing programs: apt, aptitude or synaptic, there should be not be any problems.

I use Brothrer HL-2130 bw laserprinter, and if I need coloured output, I use my wife's Xerox C235 MFP colour laser printer.

It should not be impossible to use Epson printers too.

If it was configured to use over wifi, it is a driveless pritner, which I tried to indicate in my link. Same goes to okular, you have to install sane-airscan

Good to make backup of your /home before trying, better to be safe than sorry. The right procedure is described above, but if might be difficult if you are not a seasoned Linux user. Power off and on your rpi, see if it comes up.

When I had rpis, guite often the /tmp got full, cleared it, and worked again a few weeks.
