I have a Debian 11.3 VM installed in VMWare Pro on Windows to test it out. It's running Gnome which keeps freezing about 5-10 minutes after login, usually after opening a few apps (Synaptic Software, Filesystem browser, Dconf).
Anyone else having similar issues with Gnome on Debian 11.3? This is a fresh install.

Must be a problem with your VMWare Pro setup on Windows. I installed Debian 11.3 with Gnome desktop on a VM with Qemu/KVM on Virtual Machine Manager (within a Debian GNU/Linux host), with no problem at all.
