I understand that full drive encryption is somewhat of a misnomer (since a standard Debian installation with encryption leaves /boot unencrypted).
Does anyone know if 11 will be the same way or, is there an easy way to actually encrypt /boot after the fact?

Why a misnomer ? AFAICS, the Debian installer does not claim to do full drive encryption.
Even if /boot is encrypted, the boot loader itself cannot be fully encrypted.
