how to avoid that the system installs more as what I need (all kind facultative / recommanded packages)?

which kind of setting file (where? in etc?) can I use for that?

analogue question if I install more with apt or apt-get (what is the difference between both esp. conc. that point?)

It depends on what you consider useful for the installation according to your needs. The Debian installer provides different types of presets, depending on the type of installation required (for example, server or desktop). The Debian Install Guide [1] for current stable release provides all the required information about the best practices to install Debian Stable and [2] for package selection at the install time.

Nothing special is required, the debian installer will install the programs and configuration files in the appropriate location of file system.

apt is the recommended package management tool for the current release of Debian Stable in most delicate tasks, for example [3]
