Very unstable connection when streaming files from Debian server

I have a Tinker Board running Armbian:
Armbian 21.02.3 Buster with Linux 4.4.213-rockchip
System load: 5% Up time: 5 days 22:17
Memory usage: 13% of 1.96G Zram usage: 3% of 0.98G
CPU temp: 55°C Usage of /: 21% of 29G
I have a problem with multiple different services that I'm using on the server. I have a Plex server, which gets stuck in buffering about after 5-10 minutes. It's not that it's slow, it just suddenly refuses to buffer anymore and I either get an error on my TV/Chromecast or just seems to buffer endlessly.

I also have an Apache server where I can't download any larger files. You can try it for yourself here https://spliid.info/testt/largefile (file created using fallocate -l 1G largefile)

The files are streamed directly from an SD card on the board. I used a wired connection directly to my router. I don't seem to get anywhere near max system load.

I have tried iotop, but it just shows that the service is reading from the disk and then it suddenly stops.

Does anyone know the steps to debug this?
