I just made a clean install of Debian 11 and I tried to change the default fonts with Tweaks tool. With the Gnome apps, everything works as expected, but with KDE apps they use some other font and the also are in italics. Changing the fonts choice back to where it was fixes the problem.
How can I control which fonts KDE apps use under Gnome environment?

Upon further testing, it seems that the font I was trying to use was faulty. Replacing it with an older backup I had, now it seems to work.
