I need a new laptop, and the choice of GPU is between nVidia RTX3000 series and AMD Radeon RX 6800M Mobile Graphics.
Performance wise, the RTX is not hugely faster than the RX6800, and I am not interested in the RTX ray tracing and AI features.
What I am interested in, is how easy it is to install and update the graphics drivers. I am using Debian Testing.
I got burnt in the past with nVidia updates becoming a mess. I understand the drivers for Radeon are built in to Debian, and so should be easier to maintain.
Any using RX 6800M on Linux?

That's really an interesting question.
Unfortunately, I have no experience with AMD graphic cards nor with newer Nvidia one's, at least up to now.
I tried to query the linux hardware database for the two cards:
1) AMD RX6800 totals 15 hardware probes [1]
2) nVidia RTX3000 toratls 13 hardware probes [2]
You can analyze the probes to understand what are the kernel requirements (for example, the used kernel version), the drivers used and the status (works / does not works).

Thank you Aki for those links.
In practical terms, I only found one laptop with RX6800M : ASUS ROG Strix G513QY 15.6" (a 17" comes out in Dec '21),
whereas there are loads of laptops out there with nVidia RTX3000 series.
So just in terms of choice and availability, I may have to go nVidia again. A real shame!
