Using Debian 11 fully updated as of today.
OS Type 64-bit
GNOME Version 3.38.5
Windowing System Wayland
When I right click on a file or folder, and select the Compress option, I do not see the "Other" option that would allow me to compress with a password.
Thoughts and suggestions welcome.

Doesn't seem to be an option (anymore?). Gnome is fond of removing useful features, and the file manager has changed a lot recently.

Open it and click on the three stacks on the right.
Tap on password and you can set any password for the zip file.
