We have Debian servers running Debian Bullseye and we would like to upgrade to Bookworm. In order to obtain ZFS 2.2.2, are there plans to update the ZFS packages?

From https://packages.debian.org/search?keywords=zfs-dkms you can see that zfs is currently not part of Debian as it is in contrib section. However, in experimental there is a package with version 2.2.2.

No. They can migrate from "experimental" to "unstable" repository and then to "testing"; see: The 2.2.2 version has been released less than a month ago (Nov 30 2023). It will not make to the current Debian Stable (Bookworm). You can compile it by yourself, anyway.
