Today, I was going to do the tests you ask me to do when Gnome Software informed me that I have software that needs to be updated. I had not run apt update since the previous update two days ago. On previous update there was the following packages for upgrade:

So it's possible that an upgrade on one of this packages solved this problem. Maybe it was apt. Or packagekit, I don't know.

Still, I'll keep an eye on this for the next few days in case it happens again.

Even if we will never know the reason, that's really good news!
I checked the changelogs and there doesn't seem to be anything related.
