I run debian 11 and nextcloud. It uses php, and I see that PHP 7.4 is end of life.
https://www.php.net/eol.php
But inn the default repositorys is not php8.
Is it safe to stay on php7.4.33 that is the lates version from the debian repositorys?
should I update and add the
https://packages.sury.org/php/bullseye main repository?
Or is it safe to stay on php7.4 with debians packes?

Yes, packages in the stable repo get security updates from the Debian Security team.
Stable keeps versions the same from release date (why it is called 'stable') and security fixes are applied to the existing versions, rather than like some other distro's / OS's that just upgrade the version, potentially breaking / changing functionality that you may be relying on.
I would not recommend using foreign repo's.

If you want things to not break and have no other pressing need for the shiniest new thing, I suggest you stick with packages from the stable repos. Incessant whining from certain webdevs aside, they're neither broken nor insecure.
