I tried twice to install Jessie (for educational studies) with both net-inst.iso and dvd.iso but at the end of installation no package customisation is required. At boot I chose "graphic installation" option.
I waited installer asked me what package to install, do you know reason ?

I have to use this specific version because It used inside my school.
I was using live dvd to install Debian, so I download debian-8.8.0-amd64-DVD-1 and now It shows the following screen:
But It's possible to specify singles packages during installation steps?

No (well unless you get into the intricacies of preseeding).
You can uncheck everything (I would keep 'standard system utils') and install just a bare system. Then install all the single packages you want with apt or such.
