You can upgrade any moment. Before the release of the next Debian Stable (Debian Bookworm) actually scheduled for June 10th, you must replace "testing" with "bookworm" if "testing" is in /etc/apt/sources.list . This way you will stay with Debian Bookworm and will not upgrade to the next "testing".

"RC3" refers to the installer rather than the installed system. You're running a bookworm system that happened to be installed by the RC3 installer.

Just check /etc/apt/sources.list and make sure it points to "bookworm" rather than "testing" (which it should if you used the RC3 installer).
